I knew that this new job was sending me into a more corporate and professional arena when I pulled on underwear for the first time in recent (and not so recent) memory (literally putting my big girl panties on) yesterday. And, I knew that I was growing up when I left them on all day. I’m not sure when my tactile aversion to lower half undergarments began, but it was well documented on my previous blog Polka Dots & Protein Bars. Even my sweet husband high-fived me for my perseverance when I walked through the door last night and immediately slid them off when I entered the kitchen (for pure comfort sake, not for anything remotely PG-13). If one’s success can be directly correlated to the time they endure the grip of cotton underpants, then I’m a real champion. However, if their lack of shame for posting a blog about it deducts points, then I’m right back where I started.
Before entering this new career, I was able to slip off to the beach for a few days with my mom, who made it her mission to teach me how to relax. In doing so, she naturally lost her own ability to do the very thing, but mothers are nothing if not selflessly sacrificial, amIright, mamas of the world? All in all, wine helped us both out considerably in our goal achievement, and the only bit of work I did whilst away on the sandy shore was to document what we would eat for dinner (and subsequently, lunches) for the next thirty days. I worked to vary proteins, meatless dishes, price points, preparation time, crockpot meals and also added in days that I knew we would be eating out. I’ll grocery shop once per week (minus the near-daily stop for a 20 oz. Diet Dr. Pepper, which was created to be better in that plastic bottle than out of a can… not that I’d kick that can out of bed either, of course) and do some meal prep on weekends. Here’s a look at our September eats…
Sunday, September 1st – Crab Stuffed Avocados (I made double the crab, and the next day we enjoyed it inside omelettes and later as a dip)
Monday, September 2nd – Seared Scallops and Mahi-Mahi with roasted poblano citrus sauce (I later learned that DTH has an aversion for orange essence paired with fish… who knew? I, on the other hand, deemed it delicious), couscous with feta and roasted broccoli (pictured above)
Tuesday, September 3rd – Date night to celebrate the first day of the new job! We went to a local favorite of ours, New South Kitchen. We shared barbecue pork spring rolls (so divine), pimento cheese, a sirloin entrée, and a mixed green salad with toasted pumpkin seeds, aged cheddar, chicken and an orange mustard vinaigrette. And a bottle of Oyster Bay Sauvignon Blanc (hey-o, half priced bottle night!)
Wednesday, September 4th – Sussex beef with long grain wild rice (I threw this in the crockpot Monday, so DTH ate some for lunch Tuesday, I brought it with me today, and I’ll enjoy it tonight as planned)
