On Our Plates

Annablair is one month old today. I could do the very cliche, “I can’t believe it! The time is flying by!” I mean, that sentiment couldn’t be more true, but eh, I try not to be too trite in this little space.

All that said, as we keep adjusting to a new routine with each day, I was super excited to sit down and meal plan again today. I’ve been making 1-2 meals a week for us since we got home, but with a large freezer stash and friends dropping meals off, I haven’t really been following a plan. As an uber lame nerd, I was anxious to sit down with my laptop and grocery list today. We took family trips to Aldi and Target to grab what we needed and came in well under our $100 weekly grocery budget for 6 dinner entrees, lunches and breakfasts for the week ($91.89, in fact).

Creamy Southwest Chicken
Fish Taco Bowls
Brisket Tacos – We had some brisket that David smoked in the freezer, so I used that for these tonight, then premade the slaw for the fish taco bowls and used it on these. So basically, we didn’t use this recipe, but I have before and loved it.
Stuffed Spaghetti Squash
Slow Cooker Butter Chicken
Spicy Pork and Kale Soup

Lunches will be repurposed dinner leftovers along with salads and roasted vegetables. Breakfasts will be an assortment of overnight oats.
