Recipe Roundup

I thought about a pithy anecdote about our ridiculous little circus. Lord knows we have plenty. But this morning, violence erupted at the high school my girls are zoned for. In the grand scope of school shootings, this one may register as fairly minor. One student shot and killed another in the heat of a fight. But for two local families, there is nothing minor about the realities they are facing. And as parents, we are reminded yet again, that we are stewarding children through an unstable, often unsafe, and always broken world. There is no simple answer. On one side of the coin, I want to preserve the lightness and effervescence inside the spirits of my 3 gems. On the other, I want to make them so aware of the heaviness that surrounds us daily. For today and for tomorrow and probably for the day after that, I am choosing to shoulder the burden of protection and surrender it heavenward. I’m choosing protection of the boundless joy that emits from them, fostering the unbridled kindness within them. Despite my desperation to do so, I can’t guarantee their safety. But I can guarantee the world that I will do my damnedest to add three more drops of goodness to the world.

And, here are some really great recipes, too…? Whoo, rough segue. But these are really good.

Spiced Gingerdoodles – So I basically forgot about these cookies until today when I made them for a friend. They are hands down the most underrated cookie in my arsenal. I LOVE these and won’t be forgetting them again.
Maple Bacon Cornbread – this was the result of a last minute quick Google search for some cornbread to take to our cul-de-sac chili cookoff. My chili may not have placed, but this little ditty took home 2nd.
Multigrain Waffles – can’t stop, won’t stop making these.
Chocolate Chip Oatmeal Cookie Pancakes – another standby favorite.
Dark Chocolate Cherry Energy Bites – I have a major sweet tooth that I’ve been trying to tame. These little balls do the trick.


The Best Classic Chicken Pot Pie – the name pretty much sums this one up. I’m sure everyone has their favorite pot pie recipe, and I’ve certainly tried many. This may be the one that I keep going back to, though.
Tomatillo Ranch Chicken – My big girls LOVED this sauce. They ate it on everything last week. I’d never used tomatillos before, but I’m glad I gave them a whirl with this recipe.
Baked Chicken Chimichangas – I actually ordered the wrong amount of chicken so used ground turkey instead. These are simple, hearty and tasty. David loved them.
Baked Chicken Meatballs – I have shared these frequently and still love them. I made a batch for my 2 big girls and our 2 best buds across the street on Thursday. Between the 4 kids, they consumed 24 meatballs.
Buffalo Chicken Spaghetti Squash Bowls – there is nothing in the name of this dish that is anything but delicious.
Healthy Slow Cooker Chicken Cacciatore – this recipe makes a ton, and I loved it. For lunch leftovers, I sprinkled with a little shredded mozzarella.
Rosemary Chicken Gnocchi – You’d be hard pressed to find a recipe that isn’t improved by rosemary. The flavor and ease of this dish is a perfect weekday situation.
Easy Crockpot Carnitas – A perfect crockpot recipe. I froze half of the finished meat and used the other half in tacos, quesadillas, and salads for days.
Crockpot Chicken Gnocchi Soup – this is one of my favorite fall soups. Again, I froze half, and we still had plenty for multiple servings and leftovers.
